What's for Dinner, Thurs., July 30, 2015

We're having a staff meeting over dinner tonight. Boo hoo, last of the season. However, I was offered a job with this same university, so I am very happy about that. I will be starting in a month, when the fall semester begins.

So if they have their delicious roast beef tonight, that's what I'll be having.

the other day, but it turns out we didn't have any teriyake sauce left either. So it was stew beef marinated in a montreal steak mix, then pan fried with white cheddar mashed potatoes.

Finished mowing front lawns, and found out that the neighbour sitting in jail on the one side is sitting in jail for rape, with a 1 million bond. So that's pretty nasty, but I didn't really mow it for him, but for his wife, who's trying to cope with the kid, the dogs, and the house without him. I'm not sure she has a job, though, so to be honest, I'm not sure how much longer they'll have the house, or whether we'll be looking at yet another empty house on the street soon. If it goes that way, that'll be the 4th house in the dozen or so nearest houses that's sitting empty. The other three are evicted hoarder in foreclosure, divorce, and really really old person death, and none seem to be selling.

Cleaning out the fridge of leftovers tonight: A few pork ribs, some veggie fried rice, a couple of chix wings, and a 1/2 tomato and 1/2 cuke as a salad. That ought to free up some tupperware...

Stuffed poblano peppers with cheese and tomato. Spanish rice and black beans.

A full glass of red wine!

mixed greens, roasted bell peppers and garlic, avocado, green onions, blue cheese and slivered almonds. red wine vinegar and lemon juice vinaigrette made with a mix of pot-infused veggie oil and some olive oil.

I have made so many new friends at this university! It would be very sad if I had to end the summer teaching gig and think I would not be associating with them again. Tonight a Russian teacher approached me and asked if I would like to socialize with her and a group of other professors who get together to go to musical concerts, dine out, see plays, and any number of activities. I was so happy to be asked.

Your salad sounds fantastic. Tomorrow I'm going to make one like it!
