What's for Dinner, Thurs., Sept. 17, 2015

I thawed some large shrimp and tonight when I get home, I intend to make some sort of shrimp salad with those wonderful lemon zest ricotta tortellinis. Not sure what to use for a vegetable; may have to call the RG for an idea.

1. Butter Bean day at my favorite place

Going to eat at Mama's Daughter's Diner - Thursday is butter bean day. It's a meat and 3 place, so probably order some rice, coleslaw and greens. For meat, chicken fried chicken breast (no gravy). Always served with home made rolls and corn bread and lots of iced tea.

I picked up at the grocery deli, and some cole slaw too. That's about all I'm in the mood for tonight.

with garlic & cumin seed.

I sliced the eggplant cross-wise in 3/4" slices and laid it on an oiled baking sheet. Then halved/cored small red peppers and laid then on the same sheet. Drizzled everything with olive oil, added salt, pepper and roasted at 500 degrees for about 30 minutes. It was to die for. Next time, I'm going to insert sliced garlic into the eggplant like the recipe called for and I'm sure it will be even more delicious.
