What's for Dinner, Sun., Oct. 11, 2015

I'm going to roast a chicken so I can make chicken soup. Of course, first I am going to enjoy it as a roasted chicken; will put sage, lemon, and garlic under the skin. It's an organic, free-range chicken. I will use convection roast, as it makes for a very crispy crust.

I contracted a cold last night, so I have been lying low and sipping hot beverages, trying to shake off the chill and feel better. I made lemon ginseng tea and added lemon balm from the garlic; laced it with a good amount of light agave.

The RG (Resident Gourmand, Aerows brought home a case of free-trade chocolate. This stuff is so politically correct that the label is also in Braille. Anyway, it makes very good hot chocolate. I just add 3 T cocoa to a cup of water, add a little half 'n half, and whisk it in my double boiler. Again, to keep the glycemic level down, I use light agave.

Mmmmm, looking forward to the aromas of a roasting chicken in my house on a cool fall day.

We are having chicken pie. My sister of the light & flaky pie crust just took it out of the oven. It is beautiful and has a long tradition in our family, started by Mom many years ago. No vegetables allowed--just crust, chicken and gravy. In later years, my mother sometimes added peas and carrots to the pie. She always served lots of vegetables on the side, however. Today we are having corn and peas (from the garden via the freezer), creamed spinach, and carrots cooked with ginger, peppers, onions and a bit of lemon juice.
For dessert, we have raspberry crumble bars and I poached a few small pears.

It's a nice cool day here too, so all the windows are open. I need to remember to get out and water the garlic bed and the brassicae.

Time to fire up the ye olde grille.

Chicken thighs (and a couple of wings I had in the freezer, too).

Pinto beans with cilantro and raw onion. Mexican rice with pico de gallo. (My fave for arrozo!)

the first item I noticed it on at my grocery store was boxes of frozen treats for dogs that we give ours if they've been out in hot weather too long.

but i walked outside and it's in the mid-80s, so i might reconsider.

i have to go to the store this afternoon, so i'll just walk around and see what catches my eye.

I'm also making a roast chicken that will probably morph into a couple of other dishes this week. I'm using Jaques Pepin's recipe which is my favorite. It has a mustard marinade that is wonderful and so easy to make. Also some sauteed green beans which ought to make it really good and kind of light.

I put lemon, basil, rosemary and butter under the skin. Squeezed a lemon over the top and dusted with sea salt.

Served it with a summer squash-onion-sweet pepper and parm casserole.

Strawberries and cream for dessert. The local everbearing Seascape berries from the farmers market are just delicious. Made my third batch of freezer jam with them today.
