i'm taking the other meatloaf from the other day and breaking it up in pasta sauce, it didn't freeze well and it's so bland i'm hoping crumbling it and spicing it up as the protein base in marinara sauce will save it

(31,170 posts)It's amazing what a good sauce can do for the blandest of things. I could take any type of good sauce and a little bread and make a meal. Bill made a killer beef sauce the other day, and ate his with meat, but I had mine on it's own. So good!

Genoa Salami, Mortadella Coppacola, Ham, Prosciutto, Provolone. Mayo, Mustard, Onions, Pickles, Tomatoes, Lettuce, Italian Dressing & Mild Hot Pepper Salad. All on some of the best bread I have ever had.
Wow, they were perfect.
I thinking dinner will be something very light.

(135,060 posts)but since they never had it before I can it was better. We dipped bread, mushrooms, pears, apples, grapes and cherry tomatoes. And my pal brought a delicious dessert of chocolate trifle so I'm stuffed.

(146,218 posts)Not so great for produce or meat, imo, but you can't beat the cheese, prepared meals, frozen foods, wine and things like nuts and dried fruits.
Let me know when it gets in and I will give you some suggestions for things we particularly like.

It was yummy. I had a lb and a half of fresh mushrooms in there.

(31,170 posts)I have some waiting for me to cook, I just haven't felt like it yet. Stroganoff would be nice and warming, and a great way to use the shrooms. I have just been pan sauteing them with a little butter and soy.

4 large leeks
2 lbs potatoes
6 cups hot water
3 tbsp whole wheat flour
1 tbsp salt
a few grinds of black pepper
2 tsp paprika
2 cups soy milk
Use the white parts of the leek (usually about 6 inches long of useable leek), as well as a few inches of the pale green parts from each. slice the long leek parts in half, then cut into thin slices - place in a bowl of water and swish them around, then take them out in handfuls into a salad spinner (grit/sand sinks to the bottom of the bowl of water) - spin until partly dry.
In a large pan, place the leeks (should still have some water clinging) and, over medium heat, cover and saute for 5 min or so or until tender - stir now and then (don't let them brown). Add the flour, stir and lower heat to low, stirring for 1 minute. Add 6 cups hot water, the salt and pepper and paprika - add the potatoes (washed and cut into bite size pieces - no need to peel if they are Yukon Gold or Red skinned; peel if Russet baking types) - bring it all to a boil, lower to simmer, partly cover - simmer 40 min. Add the soy milk, stir well - eat it either chunky (which we like), or blend a bit using an immersion blender. Adjust seasonings.
Great with good bread!

and I've got a surplus of veggies in the house that I'm trying to eat through. Darn cheap markets! So we had roasted asparagus and red peppers, and a giant roasted tomato, plus I made an awesome cauliflower mash with garlic, spiced chicken stock and nutritional yeast. The fish pieces were way smaller than I'm used to for a main protein but I am still stuffed (to the gills *groan*).

(12,254 posts)with mashed potatoes made with goat yogurt, steam-sauteed Brussels sprouts (I bought a package at Costco and we've been going through them quickly) and a crusty French roll. We eat so simply most of the time.
I made chocolate shell from coconut oil and Ghiradelli 72% dark chocolate to go over mango sorbet and sprinkled a good handful of pistachio nuts on the chocolate before it firmed up too much. Yum!
