From Christmas. Already made jambalaya and a pizza tonight. What else can I make?

(111,267 posts)You can also freeze it for future sandwiches, ham salads, and other ham dishes when you can stand to look at it again.
You could also do a UK style meat pie or pies with it, especially if you've got frozen leftover turkey from Thanksgiving. The easy way is to use a large muffin tin to form individual pies out of the hot water crust, gelatin or aspic poured in after baking. They do tend to keep well refrigerated and can be a treat at work or at least a conversation starter.

(149,627 posts)I just make my ordinary tossed green salad: lettuce, tomatoes, avocado, whatever else you like, and chopped up ham, along with your favorite salad dressing.
I normally make this in the summer, when it's too hot too cook. But I bet it would be good now. Maybe serve it with some sort of hot rolls/bread.

Keep some on hand in the freezer for cooking dried beans & peas, seasonings in dishes like cabbage or greens.

(2,674 posts)Make filling with chopped ham, left over potatoes, brown in skillet, season with salt and pepper. Put in Taco shells or soft fresh tortillas, top with shredded lettuce, chopped tomato and some jalapeno slices, drizzle with a little ranch dressing.

For dinner tonight I just cut up a chicken cutlet and threw it in a pan with ham, string beans and mushrooms. And enough herbs an spices to make it interesting.
Omelets, ham and eggs, ham in or on a meatloaf...

(8,976 posts)Food processor and adjust thickness with cream cheese and mayonaise. Add cayenne or hot sauce to taste. Add whatever tickles your fancy. Go from there for sandwiches, dip or cracker spread.

More scalloped potatoes and ham. Bet you can't begin to guess what one of my all time favorite meals is.

(29,098 posts)It's really good. I usually saute onions until they are just starting to turn golden then throw in the ham and some chopped garlic- Then the sauce or you can just use some roasted tomatoes. Sometimes I will throw some spinach or chard in if I have it.
Also diced ham with hard boiled eggs makes a lovely ham/egg salad for sandwiches.
