What's for Dinner, Mon., Febr. 1, 2016

I think I'll just snack. I have a class until 8 and am going to stop at my friend's house on the way home, so I'll pick up goodies at the store and we'll share them. Thus, no nutritional dinner: just munchies.

Pretty simple midwestern fare. Grab a bag of frozen shredded potatoes. Mix with a bag of shredded cheddar cheese (8 oz), a couple of cans of condensed cream of chicken soup, and a bottle of (real) bacon bits, smooth into a large pyrex baking dish, then cover with a top layer composed of another 8 oz bag of shredded cheddar. cook covered with aluminum foil at 350 for 30 min, then uncovered another 30 min, so all the top layer of cheese is melted.

The 'crack' part is about how addictively decadent it is, thanks to all the salt and fat in there

Grilled chicken thighs with Lemon/Garlic/Olive oil/Mediterranean seasonings. Mashed potatoes. Green beans. Tomato/broccoli salad.

Never made 'em, but I like the idea of little fishies. I'll dip them in seasoned flour and pan fry them. With some sort of spuds, and a salad to boot.

buy a bunch of them when fisherman came house to house to sell.

I hated handling them and cooking them but I guess I did ok because he ate them.

and finished off in the oven with some mozz cheese that I had to use. I had a caprese salad. Yay! Meatless Monday!!!
