What's for Dinner, Mon., Feb. 22, 2016

Teaching until late, so I've already washed the baby arugula and plan to have an arugula salad with shaved parmesan and toasted pine nuts. I also have washed three containers of little gold cherry tomatoes, which I will prepare for roasting and then put them in when I come home.

I might have a little beef tenderloin or chicken on the side.

Lunch was-
Mrs Snark had a swiss/cheddar grilled cheese on whole wheat with fresh fruit "Fruit Frenzy" from Meijer.
I had "Nuke Plant", Trader Joe's Eggplant cutlets 'nuked' until thawed, crisped up in skillet, then added 2/3 cup of Arrabiatta sauce and top with shredded parm and a dot (or 3) of Tabasco.

For dinner, she's requested pizza, so...
Herb crust pizza from scratch one margherita and the other black olive, red onion, green pepper.
Trader Joe's Quattro Formaggio cheese is soooo tasty!

Certainly has its place in life; yes it does.

Did you know there are some Trader Joe cookbooks out there? I know, sounds hilarious, but they actually have some good ideas. If you go to Amazon and put in Trader Joe cookbooks, you will get pages of them! I have one and get some ideas from it now and then.

We're having leftovers: grilled chicken thighs with garlic, lemon, olive oil; roasted cauliflower; kale salad with dried cherries and parmesan; cherry tomato/avocado salad.

It is unseasonably warm, stormy, rainy, dreary, with rough weather, possibly tornadoes on the radar. Stay safe, ya'll.
