It's a cool, rainy day here, and I would like some soup. Trouble is, I have no time to make it, so maybe I will just have eggplant parmesan with pasta for an appetizer. For dinner, the rest of my baby arugula with sliced beef tenderloin on the side. I have an insanely good balsamic vinegar to toss it with, and I like to have toasted pine nuts sprinkled on it, too.
For dessert, I have a half container of Ben & Jerry's Red Velvet Cake.
The weather threw us all for a loop yesterday and really messed up my plans, and the RG's, too. I didn't even make it home to post yesterday's thread! We ended up going to the restaurant with the NYC skyline view. It was pretty quiet because of the weather. I had the same thing I had when we went a week or two ago--that delicious lamb shank with sweet potato puree on the side. What a combo. I have to learn how to make this. The RG started telling me how to choose a lamb shank, though, and I'm already intimidated.

(1,451 posts)Glad you had a good dinner, though. Of course, now I'm a little nervous because we buy lamb shank and always enjoy it. Let us know what we're doing wrong We're having a simple dinner of steamed shrimp and roasted cauliflower

(35,713 posts)for the lamb shank. I think it's supposed to be about an inch wide. I'm going to double-check that, though, and I'll let you know if I got it wrong.
Isn't lamb shank the most wonderful tasting dish!? I just love it.

(2,016 posts)with an orange Hollandaise sauce. Roasted asparagus with parmigiana, and a mushroom risotto. I have time to cook today, so why not try something different.
I was looking at a Hollandaise sauce recipe today that was supposed to be made with both lemon and orange.
Picked up fresh asparagus, too!
Your menus always sound like they're off an expensive menu.

(9,838 posts)states--just strong winds and pounding rain. At least we didn't get the tornadoes and hail that was in the forecast.
For dinner last night and tonight: Field peas, mixed greens sauteed with leeks and cumin, red potatoes mixed with roasted cauliflower and onions, sliced avocado.

(14,733 posts)Coffee, cold leftover french fries, small handful of cinnamon jellybeans, heh. I dunno, if I get hungry, I might throw a sandwich together later, but I'm just not feeling it. Mud, rain, and just total lack of motivation today. Reminds me, though, I need to do a couple of CEs and renew my phlebotomy certification soon, as well as renew my malpractice insurance for the RN. Thankfully, it's pretty cheap as long as you're not actually working as an RN.

Goat cheese and bruschetta
Brick chicken, which is a chicken cut butterfly style, marinated in olive oil, garlic, lemon, rosemary and chili pepper flakes.
Put it in a pan in a 350 degree oven under a foil-wrapped brick and bake til done. We're having risotto and green beans with it.
