What's for Dinner, Sun., Mar. 6, 2016

Cold chicken with wasabi sauce.

Raw asparagus, chopped into 1-inch pieces.

White wine and a chocolate doughnut from Dunkin' Donuts for dessert.

I cooked the better part of the morning, making another one of those vegetable cheesecakes, only this time I used my own combination of vegetables, which was zucchini, lots of dill, parsley, and asparagus for the vegetable. For color, I mixed in a little red and yellow pepper. Turned out very good, and now I'll have something to have early in the morning before heading off to work.

Spud Sunday. Just popped em in the oven, so we've got an hour or so to wait.

Excited that my friends down in New Mexico have started phase 2 of the crowdsourcing project to build a new home without a bank being involved. (See link in my sig.) It's going to be a very modest building, but even the smallest house costs a lot to build, and they're shooting for 15k for this phase, to get the plumbing and electric set up, get a foundation poured, and get the materials for framing and the outer adobe. Just hit 1800 so far, so they've still got a long way to go.

It was actually pretty nice here today, cool but not cold, mid 40s or so. Think we're in a warming trend, though, as I heard something about 70s later in the week. Never a dull moment in Ohio weather. Trying to find my property tax receipts for last year, only thing I still need to finish my taxes. Weirdly, the tax software I'm using has me so far at basically half of what I thought I was going to owe. I thought when you were doing the 1099 self-employment deal, you ended up paying both your side and the employer side, or somewhere around 14% or so minimum on income, even if you didn't make enough to owe any regular taxes. But it's showing me owing only roughly half that, and I'm wondering if I entered it wrong somehow. I guess I'll want to review the actual forms as it is filling them out and see if it looks weird. I'd rather overpay and have the IRS decide I get a refund than underpay and owe penalties and interest.

It's always better on the third day. A salad made with Trader Joe's baby power greens and cauliflower florets and toasted hazelnuts with a dijon vinaigrette. For lunch I had the last cup of a pot of chicken tortilla soup from early in the week. It was so delicious that I wanted lots more.

Steamed broccoli
Garlic pullapart (store bought)

2 cups packed organic basil from Trader Joe's
2/3 cup organic olive oil from Costco.
4 cloves organic Spanish garlic
2/3 cup freshly grated Pecorino Romano
Pine nuts
I think I need to squeeze a lemon wedge into the next batch of pesto to brighten it up.

grilled zucchini smeared with basil pesto, grilled pineapple. Mashed potatoes, mashed sweet potatoes, green beans, broccoli & tomato salad, and 3 kinds of cookies for dessert. My sister made oatmeal raisin cookies, lemon thumbprint cookies, and a killer brownie from a recipe that was handed down by our late Aunt Ida.
