What's for Dinner, Tues., Apr. 26, 2016

Fried rice with shrimp.

on edit: Had a great time at the restaurant last night (I had lamb shank). I got to hear from the RG about his trip to Buenos Aires (Lima is the airport). He tells me how beautiful this city is. Also how the driving can be crazy--even crazier than Italy-- and how no one actually observes lines.

The steaks are fabulous, he says, and huge!

Whatever leftovers are to be found. If it's not enough, then I'll pop in a TJ's lamb vindaloo and steam some cauliflower.

Day 1: sweet potato/bean/corn enchiladas.
Day 2: leftovers
Day 3: OMG, there's still a ton of leftover filling, leftover corn tortillas, and leftover homemade enchilada sauce, but I need a break from it. Homemade potato/cauliflower curry over rice.
Day 4: Not enough curry leftovers for a dinner, I mixed it with the enchilada filling and made more enchiladas.
Day 5 (today): Because of mixing the rice and curry into the leftover filling on day 4, I have yet more leftover filling. I mixed it with egg and breadcrumbs and formed it into blobs that are baking in the oven now.
