3-ingredient banana-pancakes

for 5 pancakes:
- 1 ripe and soft banana
- 1 tablespoon flour
- 2 eggs

Mix for a few minutes until combined into a smooth, thin and bubbly dough.

Preheat a pan to medium-to-hot and add a tablespoon of oil.

- For thick pancakes: Pour some dough in the pan. Close the lid, so the pancake gets heat from above. Flip after few minutes. (These pancakes need a long time until they get firm. Only 1 egg?)

- For thin pancakes: Pour some dough in the pan and spread evenly by tilting the pan. About 20 seconds per side. Careful when flipping: The pancakes like to stick to the pan.

So I went and tried that, half with banana and egg, then added a tsp of whole wheat pastry flour to the remainder, cooked them in the cast iron.

Knocks down the rise of the eggs so a little flatter, not quite so banana tasting, the bite is a little firmer because of the fiber in the flour, I expect. They are easier to turn without breaking, and they brown a little more uniformly with the flour.

Either is really good.

I had some ground cloves and allspice sitting there, and hit them with maple syrup at the end.
