What's for Dinner, Sat., Aug. 8, 2016

I've been on vacation to visit my brother. I traveled most of Thursday and Friday from NJ to Nebraska.

Tonight I'll grill marinated chicken, which we picked up at Whole Foods. In addition, either broccoli or cauliflower. I'm researching a recipe. It might be stir-fry, as we both like Asian food.

For dessert, cantalope and purple grapes.

1. Some of my Mom & Dads ashes are scattered along the North Loup River at Brewster, Nebraska.

Mom was born in Brewster. Lovely country. Got my first ticket shortly after scattering the ashes by a very cordial Loup County sheriff. My distraction cost me $86.00.

Going Belgian tonight.

Mussels in white wine, handcut twice-fried spuds, even made a tarragon mayo. I thought about making tomate aux crevettes (shrimp stuffed tomatoes), but it would have been too much. I'll save that for another day. A light green salad too. for tonight.

Stop off at a Runza Restaurant. They're a Nebraska specialty. It's a relative of the pasty, empanada, pocket pie, etc...
A convenient hand food that is sort of the "State Food" item. A mixture of meat, spices, and cabbage in a bread pocket. Also called the cabbageburger.

When I was in high school a looong time ago, when they were on the lunch menu, EVERYONE was in line for them.

It's low calorie and delicious. It's also vegan.
