Cold chicken salad served over tossed romaine. In the chicken salad, I put chopped grapes, scallion, and celery. Dressing is mayonnaise mixed with a little cayenne and agave. I toasted almonds and also have chow mein noodles to add crunchiness.

(12,253 posts)Mr. Pup has been unemployed since February, so for tonight we splurged on shrimp and fresh fruit. I'm making coconut shrimp (fried in coconut oil), jasmine rice and a fruit salsa of mango, blueberry, apple, kiwi, green onion, tomato, tangelo, lime and jalapeno pepper. My friend and neighbor gave us a bottle of Proseco. The weather is hot and nasty, we'll stay in, keep cool, and be fine!

Happy to see you again, yellerpup. Sorry to hear about unemployment; I'm surprised because it seemed when I heard what his job was that it sounded like one of those where you're never out of work. Wrong again here.
Anyway, I know you two will enjoy yourself and my brother and I will toast to you this evening (he with his tea and I with my Mike's lemonade).

(12,253 posts)Lemonade sounds like a good choice for the day! (Especially if it's Mikes) We didn't think it would run out either, but summer is traditionally a slow season. He was doing fine freelancing until July and then everything stopped. He's only been on unemployment for a few weeks; we are hoping September will bring fresh business. Thanks so much for your good wishes. Since the use of my hands is very limited now, I don't cook much but I coach Mr. Pup through and it's become fun for us.

(35,680 posts)Bought it once in the grocery store, but ran out. When I went back, it was no longer stocked. Over a period of time, I checked all the food stores around me, but to no avail.
Found some on Amazon, though, and ordered two cases of six each. Isn't it just the best for summer tea!?

(11,770 posts)I often blend the two when making my iced tea- 2 chai spice and 4 green tea a pitcher. That's pretty much my favorite.
