What's for Dinner, Tues., Aug. 16, 2016

Vietnamese lemongrass chicken is marinating and will go out on the grill this evening.

Bok choy, which will be stir fried with ginger and garlic using hot sesame oil. Sprinkled with sesame seed.

Watermelon and blueberrries for dessert.

Red potatoes & onions, hot cajun sausage, corn on the cob, and jumbo shrimp. Served with salad & cornbread.

2. We got pizza

Pizza -- one of the most delicious things I've been missing! Sadly, the pie didn't really have a great taste. I thought it was me, but as soon as I said "there's not much tomato flavor," my husband told me he was unhappy too, but hadn't wanted to kill my buzz.
We realized there is another place nearby (I refuse to frequent a pizza chain), so we'll go in a few days to try a slice.
Tomorrow, I'm making what my mom calls 'potted steak'...like pot roast but smaller pieces, with carrots and perhaps over egg noodles. Doctor said I'm still anemic from chemo, so red meat it is!

P.S. the icebox cake was more fun to make than it was to eat! The filling was too sweet for my taste. I may eat a small piece tonight, but that's going to be it.
