1. The dark green stuff is tough and fibrous and generally considered inedible

but I used to clean it thoroughly and save it for "garbage soup," a broth made out of vegetable trimmings. Leeks are very mild and in the absence of onion, gave it almost a chicken-ish flavor.

Usually the outermost leaf is removed right down to the root and the white and bright green parts are used.

2. I would think that the amount denotes what to buy. Then you cut off

and use the white and light green parts, which should be about 1
/2 the length but more than 1/2 the weight. Are you making vichysoise?
