My recipe calls for 1 pound of leeks, white and light green parts.
Question: Does 1 pound mean the entire leek with the dark green part you don't use or just the white and light green parts?

(111,283 posts)1. The dark green stuff is tough and fibrous and generally considered inedible
but I used to clean it thoroughly and save it for "garbage soup," a broth made out of vegetable trimmings. Leeks are very mild and in the absence of onion, gave it almost a chicken-ish flavor.
Usually the outermost leaf is removed right down to the root and the white and bright green parts are used.

and use the white and light green parts, which should be about 1
/2 the length but more than 1/2 the weight. Are you making vichysoise?
