What's for Dinner, Wed., Jan 25, 2017

Butternut squash and kale quesadillas. I'm following a Pioneer Woman recipe. Lotsa' pics, plus she covers how to easily cube the squash, which is always a pain. Hope it's not this time, though.

2. Cabbage/vegetable Soup

Chopped head of cabbage, Carrots, celery, onions, portabella mushrooms, diced tomatoes, sausage, jalapeno bacon, what was left of bloody mary mix, chicken broth, bay leaves, cumin, salt and pepper.

drinking vodka. Getting used to being Russian.

4. Grilled ribeye

with a green salad w/ blue cheese dressing. Roasted vinegar potatoes (**). I'll polish off that leftover ear of corn, too.



(**) Trying a new method here. Boiling baby spuds in salted water and vinegar, then roasting them in a hot oven with olive oil. We'll see how it turns out. BTW: I'm a salt and vinegar chip fanatic.

6. Sweet potato chili.

In a stockpot, I browned an onion and added some old carrots. Added the end of a can of chipoltes in sauce, some tomato paste that had been frozen, some wilted spinach and a half a bag of frozen peppers. Some zucchini. An old can of beans. And I let it cook down, tasted it, added cumin and coriander and then began the oven at 450.

Hot and nice diced my sweet potatoes.....a whole bag from Traders joes mixed with bit of oil and face up. Some salt.

Roasted them, til their tips were golden brown and then I pureed my base stock and made it pretty and good and put perfectly roasted sweets on top.

Cleaning out the refrigerator, 101.
