What's for Dinner, Fri., St. Patrick's Day, Mar. 17, '17

The Resident Gourmand (RG ) and I are having a St. Patrick's Day party. It’s somewhat of a tradition to make corned beef, cabbage and potatoes for our friends.

However, this year the RG is doing things a bit differently. For example, he started brining the corned beef on Monday afternoon. Two days ago he put pickling spices in. Last night he roasted carrots, parsnips, and the cabbage, cut in 1/8ths. The interesting thing about the cabbage is that he wrapped each piece in a slice of bacon. We’re also having potato-cabbage latkes.

There are numerous other vegetable dishes and appetizers (numerous Irish cheeses). I'm hoping to take some pics and post them tomorrow.

Almost all the friends coming this year are musicians and artists, and in addition, one French horn player is also a fabulous cook who is bringing Guinness stout cake and mashed potatoes with horseradish in them. Of course, she is married to an Irishman: A jazz musician and composer.

been cooking a trader joe corned beef in the crockpot all day with spuds, onions and carrots - just put the cabbage in.

Going to do a brown sugar honey glaze in the oven.

Dessert - sticky toffee pudding with caramel sauce and vanilla ice cream.

Corned beef is an American dish, not Irish. The whole house smells amazing! It's been cooking for 3 hours already.

Debating what to eat right now.

Leaning toward a mixed greens salad, adding leftover cold chicken, Danish Blu Cheese crumbles and some baby spinach leaves.

I may also toss in some of the broccoli slaw TJ made.

If I am still hungry there is some of the Jambalaya left, as well as potato soup and pulled pork that had been saved in the freezer.

There is too much food already ready to bother cooking anything more.

married into an Italian family. And, as University of Kentucky maniacs, it's all basketball all the time this weekend We went all out tonight and had beef stroganoff hamburger helper
