What's for Dinner, Thurs., April 27, 2017

Pasta with veal. The sauce is made with peanut powder (ever heard of that? I hadn't). It adds a new dimension to the flavor--deepens and enriches it. This is the RG's concoction.

Salad. I combined deep purple lettuce leaves (from garden) with bright green (chartreuse) leaves from a head of butter lettuce. So pretty! I mixed in sliced Persian cuke, red onion, and chopped celery for crispiness.

Roasted Yukon gold baby potatoes with pancetta. These will be roasted in a cast iron pan for extra crispiness and that nice, golden-brown exterior.

1. Egg rolls

Also, I wanted to talk about how my egg rolls turned out last night. Pretty good, considering I haven't made them in about 15 years.

I forgot that egg rolls are delicious for breakfast!

Last night, though, I served them with hot mustard sauce, ginger-scallion sauce, and apricot sauce.

The veg. mixture was sliced cabbage, there were shitakes, carrots, chopped green onion, garlic, and bean sprouts. Ginger also.

The one mistake I made was that on a few of the rolls, I overlapped the wrapper as I was rolling them. This caused a bit too much egg roll wrapper in the middle of the roll and it made it a little too doughy. It didn't taste doughy--it actually tasted like a piece of potato. But that was only on a few of them.

Sounds yummy - I'm a hot mustard sorta guy. I keep a tin of S&B around at all times.

Also, never heard of peanut butter in a veal sauce. That would kill me in 10 minutes (literally, I have the allergy). Although, the aroma of peanut butter makes my mouth water every time. The gods do vex me...

Taste to the pasta dish. Now, how he figured that out, I will never know.

Re egg rolls, I like to mix the mustard and the apricot sauce.

I had leftover meatloaf on a bun with a slice of American "cheese".

Rather close to a cheeseburger, I think.

I have leftover Mexican rice, and also pinto beans. Not much in the mood for meat today, so maybe I'll just combine the two in a tortilla. I steamed some broccoli this morning, so maybe I'll pour some blue cheese dressing on it and call that a "salad" if I'm still hungry.
