What's for Dinner, Thurs., June 8, 2017

Turkey meatballs made with dried apricots (I bring them to a boil in OJ), creamy goat cheese, scallions, and rosemary. I roll 'em in panko and finish off with apricot sauce.

Arugula salad with pine nuts and parmesan. The arugula is from my garden.

today. Don't know why my niece/neighbor planted so many, but her chickens are happy and so are we. I found one of those zucchini baseball bats (you know, the kind that appear over night), so I cut it up for the chickens, and they were happy for the dietary diversion.

I made a dish with zucchini sauteed in olive oil with Vidalia onions, bell peppers, fresh basil and a sprinkle of dried Italian herbs. Grated parmesan on top.

We also had the last bag of zipper peas from 2016 from our freezer. Hope we get lucky and have a great harvest this year. Our freezer is looking pretty empty.

I cut it when it's very young. The ideal size is 5" long and an inch or so in diameter.

This year I'm trying what's called some patio varieties--zucchini you can grow in a pot.
