...we are actually having one tonight with steak and prawns. We just chop one up keep it in the fridge in a baggie and spoon some mango chunks over everything!

(Soft/firm like an avocado; skin differs by type but will most likely be golden when ripe). Peel it and then start cutting off thin slices the long way. There is a hard fibrous core that is sorta a flat ovoid shape; the flesh will cling to it and the easiest thing to do is to cut the thin slices all down the side.

The King of Fruit--I love mango season!

Eat them fresh, or on top of some vanilla ice cream. I like mango salsa with chicken or fish tacos. Same as peaches for pies and cobblers, and mangoes are delicious in cheesecakes.

Slice them in half the long way.
Get a glass and slide the mango or avocado along the side of the glass so that the fruit goes into the glass and the peel stays on the outside.

9. Mango frozen yogurt--yummm!

4 cups chopped mango (chop then freeze)
1 cup Greek plain yogurt
3 tbsp honey or equivalent agave sweetener
2 tsp vanilla extract

Blend in heavy duty blender (like a vitamix) or food processor. Transfer to freezer-proof container.

Serve immediately (if prepared with frozen fruit) or freeze until ready to serve.

Even grocery stores get it wrong and sell containers of cubed mangoes that are not yet ripe. The taste is awful.

They way I check for ripe is by gently squeezing the fruit with my full hand wrapped around it - exactly as I do with avocadoes. They feel soft the way avocadoes do when they're ripe.

For breakfast, I like to have some plain yogurt (Freeanna is my fav) with chopped ripe mango. Some skillet toasted 7 grain bread on the side. I have made ice cream and frozen yogurt with mangoes, also mango salsa. Yes, they must be ripe. There is technique to removing the fruit, I am sure there are many videos on how to do this on youtube. I saw how to do it years ago with the Two Hot Tamales on Food TV. Buy them when they are in season so they will be ripe (May to July). They do not ripen well at home, the fruit gets tough and stringy.
