(23,317 posts)In the Instant Pot to tenderize. Jasmine rice. Sesame roasted Brussels sprouts. My guys are on a hunting trip until Sunday in an effort to refill the freezer. Mama has a rare weekend alone. I can hardly contain myself!!

(2,016 posts)O...M...G... do I miss elk! My fave of all meats. I used it eat it whenever I could when living in Wyoming. And if you don't hunt (I don't), make friends with those who do.

(23,317 posts)I was scared to post it...but went for it anyway. We eat a lot of game at our house and elk is a favorite. I don't hunt but the guys in my family do. I was a vegetarian before I met my spouse and I would be again if they didn't hunt.

(12,253 posts)and I followed the recipe on the bag. I began by putting the butter in the freezer while I measured the 2 C. of flour, 3 tsp. baking powder, & 1/2 to 1 tsp salt (depending on your preference) and whisked them together to mix well. The recipe also calls for 2 Tbsp. of sugar, but I don't care for sweet biscuits and just left it out. Grate 1 stick (8 oz.) of slightly frozen butter (large holes side of grater) and cut it into the flour with a pastry cutter or fork until well combined but not sticky. Do not overwork the dough. Mix the wet ingredients together, 3/4 C. milk (I used coconut milk and had to add a couple of extra Tbsp) and beat an egg into it, then make a well in the center of the dry mixture and dump in the wet. Toss all together with a fork until everything comes together and drop onto an ungreased baking pan and bake @ 400 degrees for 12-15 minutes. They are great fresh out of the oven, but they get stale quickly. I rarely make them unless I have company because they are not that great as leftovers. Good luck with it.

(12,253 posts)I also have a milk allergy, so I haven't had white gravy for a while. The gluten-free flour works well in gravies (thank goodness!) so I use chicken or beef stock (Better than Bullion + pan juices) and sometimes give it a sip of wine. Makes excellent "skinny" gravy!

(2,016 posts)This ought to use up all the remaining veggies and cold cuts (hard salami, capicola) in the fridge. I'm make an anchovy vinaigrette for it.
If there is any salad items left after this, they all go to the backyard wild bunnies. Off to Vegas tomorrow, C&B'ers, for a week of great eats! See ya soon.
