What's for Dinner, Thurs., Oct. 26, 2017

Appetizer: sushi

Main course: Grass-fed beef and pork meatballs, spicy. Have thinly sliced vegetables, which are deep fried, as a topping.

Salad: Chopped salad with vegetables like carrots, red pepper, red onion, and roasted tomatoes. I got up very early this morning and roasted a pan of tomatoes, and did they ever turn out good! Top with dill-feta cheese yogurt dressing.

Dessert: miniature apple strudels. I'm making cream cheese-raisin topping for them.

Last night I had the chocolate dessert that looks like a sailboat! It was beautiful, and oh so delicious!

stuffed with fresh sage, rosemary, thyme, onions, LOTS of garlic, celery and carrots. The juices made for some amazing gravy. I made some garlic mashed potatoes, and baked a sweet dumpling squash.

Tomorrow, most of the remains of that chicken will end up in the slow cooker, and there will be SOUP for the chilly weekend!

I mixed black beans, peppers, corn & sazon spiced con culantro y achiote rice, which was a lovely & suprising orange color. I made a pico de gallo to top the enchiladas.
