About 20 lbs of green tomatoes here (cold snap last night, so we picked em all), and I started breakfast off with this recipe, which was most delicious!
Fried Green Tomatoes with Poached Eggs and Avocado
Instead of bread crumbs, though, I used almond flour (ground almonds).
The technique of poaching eggs eludes me, so I took the author's advice and used a ramekin. Turned out perfect.
Found lots of good recipes at Pinterest and also in my Ball Blue Book of Canning, Freezing, and Dehydration.

(17,444 posts)Our first frost was a hard freeze last night. I picked all of the green tomatoes this morning. Many show signs of freezing. I am not sure if any will be usable.

(2,674 posts)I used to live in Tennessee right on the Kentucky state line and I kept a huge garden. We'd get frost about this time and an old timer told me to pull up the tomato plants with green tomatoes still on them and hang the plants upside down in a cool dry place and the tomatoes would continue to grow and ripen. Luckily, we had a vacant barn and big shed on our property, so I had room to try this. And it works!
Don't have to worry here in Texas, no frost till around Thanksgiving and by then the tomato plants have played out.

Over the years have tried all kinds of this and that - vinegar and water, microwave, floating silicone boats in water - but this turns them out perfectly every time. Use a bit of butter to coat the cups, 5 min. or so at LOW heat ( too much water and too much heat made a mess first time) and they slide right out.
