(1,706 posts)This is (approximately) how I make the borscht: (this is meatless since it's for Christmas Eve)
Saute onion and a little garlic in olive oil. You can also add some celery if you like it, just not too much.
Add cooked, diced peeled beets. I usually do one bunch in the summer, then freeze.
Add diced carrot, turnip if you like and have it, add beef broth or water with Better Than Bouillion. Season with dill weed, thyme, bay leaf, black and just a little cayenne pepper.
Simmer til the vegetables are tender. Add some shredded cabbage if you want, and simmer that til tender.
My son likes it very chunky, so just uses a potato masher. I sneak by later with the immersion blender and blend as much as I think he'll tolerate
Before serving, add some fresh lemon juice and garnish with sour cream (and dill on the sour cream is pretty).

I will definitely try this recipe! You may have guessed this post wasn't really about food or borscht but I am absolutely thrilled to have your recipe.
Although the Christian tradition is weak to non-existent in my family, we always had halibut for Christmas Eve dinner when I was a kid in the fifties.
Thanks again. Maybe by Christmas 2018 we can celebrate once more.
