I wanted to pop in say hi and see how you all were doing!
I am still not cooking much due to lack of mobility, so I really haven't had much of anything to contribute here. It's been nice poking around today and seeing what everyone is up to!
I'm waiting to hear from a new surgeon to see about replacing both hips. I have zero cartalidge in either hip joint, and with my other health issues the new doc is concerned about possible bone infection if he does a bilateral replacement. He is trying to work up a plan with the guy that has done my abdominal surgeries. In the meantime, I eat as simply as possible and try to prep ahead on the days I can stand to spend a few minutes in the kitchen.
I did manage to cobble together a pretty great salad in my attempt to find a easy way to get more greens into my diet.
Berries and Greens Salad:
I have no fixed recipe here, I just throw some pre-prepped things on the plate, but the combination of flavors rocks, and would be a good way to get more greens into kids and others who are reluctant veggie eaters.
For one serving:
Greens - 1 or 2 hand-fulls of mixed baby greens
Protein - 1 or 2 chicken strips, cut into bite sized pieces (vegan mock meats or any regular protein would work, and garbanzos or white beans make another good veggie/vegan replacement)
Mixed Berries - 1/2 to 1 cup of mixed Strawberries and Blueberries. You really need both in my opinion...something is missing if you just use one berry type
Honey Mustard dressing - I toss some dressing with the greens to coat lightly (covers the taste for the anti-greens people) then toss in the protein and berries and drizzle with more dressing. (Bill brings little tubs home from the pub kitchen for me, but it would be easy enough to mix honey and your favorite mustard to taste)
Wish I was able to photograph the salad for you! It's gorgeous with the dark greens, bright pops of blue and red, and the yellow of the honey mustard dressing all playing nicely together.
Flavor-wise - it's sweet, but not too sweet, with a nice tart zing from the mustard.
I suppose there are tons of things you could add-in to make it even better! I may try some cashews soon.
Anyway.... I hope you are all healthy, and as happy as humanly possible in these weird times in which we are living...

I was going to ask how you are, but it looks like your on your way to being another "Bionic Woman" soon.
Yes, the salad you describe rocks. A friend of mine makes something very similar. The berries and greens are a GREAT combo. It's funny, but when I'm eating at home, I never think to make it. But when at my friend's house, I'm always amazed at why I haven't made it. She makes it with a balsamic vinaigrette, but the honey-mustard sounds equally delicious.
Drop by more often - I'm sure the other C&B'ers would love you to do so!

(31,170 posts)which is why I first made mine with the honey mustard. I really wanted to add more greens into my diet and planned on tucking them into smoothies...but I just never have the energy to make smoothies, so I looked in the fridge and popped what sounded good onto my plate.
And yep...hopefully in a few months I'll be able to set off alarms at airports everywhere!
