What's for Dinner, Mon., Nov. 27, 2017

Posting early due to a union meeting/dinner scheduled for late afternoon. I don't know what restaurant we are going to or even if it's catered, so since I have nothing to report on that account, I'll tell a bit about TG dinner.

We went to Wallse in NYC. The menu is still posted at their site, but I had chestnut soup, turkey, and apple strudel for dessert. The RG had rabbit spaetzle for an appetizer, wiener schnitzel, and pumpkin pie for dessert.

The chestnut soup was very light and frothy, and I must try making it this way sometime. I imagine they did it with an immersion blender. The RG didn't like his wiener schnitzel, so he had only a few bites, but the turkey was done exactly right. There were slices of white meat and the dark had been taken off the bone and wrapped in a circle.   The turkey was served with a dumpling, and also red cabbage and cranberries. The plate presentation was very attractive on all our dishes. The dessert plates looked like abstract art.

I found out why later:  I had been looking at these large paintings while we dined. Some looked familiar. I learned that the owner/founder of this and other restaurants in this group is a friend of Julian Schnabel. Schnabel even did a portrait of Kurt, the owner/founder.

Before the restaurant, I took a brief walk on the Highline and also did some shopping at Chelsea Piers. 

I enjoyed my Thanksgiving, and hope you did, too!

Cubed Yukon gold potatoes & butternut squash, cauliflower, carrots, onions, canned rinsed chickpeas, a premade green curry paste and coconut milk is in the crockpot. Closer to serving time, I'll add the thawing green beans & adjust the spices. Basamati brown rice, maybe garlic naan.
I do love my crockpot.

with a "one-pot" stuffing. Leftover stuffing from T-day was non-existent. Soooo... I'm making more using some turkey stock, with celery/onion/broccoli and whatever other veggies seem to go with. I think that's about it, as it's sort of a cleaning day:

Picked up a new mouse/keyboard combo (being Cyber Monday and all, got it 1/2 price). What I didn't realize was how many mouse/keyboards I had in a backup-used box in my home office. (Like 5 each). Remote controls for things I don't even have anymore, etc etc. Anyway, gonna clean out all that used pile, and off to the E-cycle place they go! Hopefully, I'll recover some much needed square footage!!

(a la the "Frugal Gourmet" Jeff Smith). Serving it with mashed potatoes and green beans.

I used the rest of the leftover turkey last night for turkey enchiladas. Had never made a roux with olive oil before (for the enchilada sauce), but it turned out very smooth and flavorful.

Andouille sausage
Leftover dark turkey meat
Shrimp
Garlic
Bell pepper
Celery
Onion
Canned tomatoes - 2 small cans with chili and one of fire roasted with garlic
Chicken stock
Medium grain white rice
Cajun spice mix
Bay
Salt & Pepper

Holding off on the hot sauce until I can taste the effect of the chili in the tomatoes.

I've never put turkey in before. I suspect it will be fine.

This is a big batch, I hope it doesn't out grow the pot.
