What's for Dinner, Sun., Dec. 10, 2017

Stuffed pork roast with vegetables. The RG made the stuffing by putting the bread (same as pictured in my OP from yesterday). Then he mixed it with the roast's drippings. The veggies were potatoes, carrots, and a few others I can't remember. Was it ever good!

Dessert: wild berry pie with raspberry vanilla sorbet.

We're really watching our pocket book this week until next payday, but I also have to watch carbs/sugars re: T2 diabetes, so I came up with a menu for the week -

Spaghetti tonight (had all the ingredients), turkey chili (good for 2 nights - have all the ingredients except a bottle of beer), cabbage tuna casserole (new recipe - need to get a head of cabbage), Teriyaki meatballs and rice (need to get both hamburger and brown rice), and large spinach/feta/mushroom crustless quiche (will need to get the mushrooms).

Will probably have to buy some add'l veggies to fill out the meals. My son won't eat salad and at 17, can really pack away meals.

Not having a separate Christmas or travel savings really pinches this year. No matter how small, gonna reinstate them both again after we get back to work from xmas break.
