Turkey Stock

Just made some stock from an organic turkey with organic vegetables. Strained and in quart containers. Got three quarts.

Liquid gold. The possibilities! One recipe is a green lentil pottage. Another is cream of turkey soup.

This time I simmered it on the stove instead of the pressure cooker.

So full protein that it become gelatinous in the frig.

I froze the carcass from Thanksgiving and took it out to make stock. Luckily we have gas because this was on the stove when we lost power Friday.

Today I'm going to make pumpkin soup (which isn't pumpkin-y at all). Mmmmmmmmm...

We kept the parts of the bird we removed from carcass from the spatchcocking video, and we'll probably make stock off of that. We've got the back, the breastplate, the thigh bones, and the neck.

each year is a turkey-barley soup.

Not the same thing, but just wishing I had turkey carcass and leftovers this year, my favorite chicken salad is actually turkey, with the meat moistened and flavored with a bit of the pan drippings before proceeding as usual.
