(58,785 posts)Chicken enchiladas here, rolled up and baked easy style. Made with corn tortillas and topped with green sauce, cheese and crema Mexicana. Since they come out kind of heavy and casserolish with all that goo, I like to set them off with a little fresh pico de gallo-type stuff on top.

Ground chili turkey, less then usual spices, 2 pinches of grated Mexican chocolate. Divvied it up for couple of meals.

Homemade Pesto on Trader Joe's Vegetable Radiatore.
Steamed medley of broccoli, cauliflower, carrots.
Garlic bread.
