Were going to the place that has the beautiful skyline view of NYC tonight. Not sure what Im having, but was thinking of the seafood plate.
For lunch, however, the RG came up with this interesting arugula tuna salad. We wrote up the recipe:
Tuna, Baby Arugula, and Egg Salad
baby arugula
tuna
3 hardboiled eggs
tomato
anchovy paste. almost 1 T or use 3 filets fresh anchovies.
dried bread crumbs (use baguette, process in blender)
2 cloves garlic
2 T butter
Melt butter, but dont brown. Add bread crumbs and garlic cloves at low flame. Stir constantly. Bread crumbs will become darker.
Quarter egg, cut tomatoes in large pieces, and mix with other ingredients.

I'm roasting a chicken breast with some pieces of garlic tucked between the skin and meat. A little olive oil on the skin and some herbs.
Also doing some cooking for the week ahead - since the oven's on, I'm baking a butternut squash for curried squash soup. And, the chicken breast is large enough for tonight's meal, plus leftovers with pasta and broccoli for a chicken tetrazzini casserole.

(68,576 posts)tastes like venison to me...but in tacos with lots of seasoning it worked fine. Aldi's had it on sale today. I mixed avocado with pineapple taco sauce, onions,lettuce and tomato...skipped cheese and sour cream as I can't eat dairy it seems...tasted great though anyway. Peanutbutter cookies with white chocolate chips for dessert...homemde.
