I make chicken salad sandwiches - fold-over in my case - put 'em in sandwich bags and sore them in the freezer. Take one out and put in the refrigerator the night before you'll need it. It's really, really good, and I always have something nutritious when I'm hungry.

You can also defrost the sandwich for one minute in the microwave, although the sandwich will be weirdly warm.

I also do this with egg salad sandwiches. It shouldn't work, but it does.
