with onions, celery, sweet potatoes, tomatoes, and blackeye peas, slightly thickened with peanut butter, to have over rice. The guys don't like bell peppers, otherwise they would be in it too.

I also chopped a bunch of veggies and the leftover pot roast to make a soup for tomorrow night. And since I was in the kitchen anyway, I made some guacamole, since avocados are so cheap Superbowl week.

We have green pepper, green chili, and spinach enchiladas with green Hatch chili sauce, guacamole, lettuce and Verde salsa. Sense a theme here in Philly?
