What's for Dinner, Mon., Mar. 19, 2018

I made tomato-cannellini soup using fresh tomatoes, onion, carrots, and fennel. I have some beautiful cannellinis the RG made from the dried state.  It really turned out good!  It's going to be cold tonight, 28, so this will be a good dinner to have.

In addition, I am making both chicken and ham sandwiches on onion rolls.

I have to go to the store and fortify my supply of hot chocolate (it's snowing tomorrow, again!), so I might get some spinach or Swiss chard to put in the soup.

Dessert will be vanilla pudding and bananas with a little whipped cream on top.

We're going to start with straight-up vodka martinis. The cocktails will be accompanied by raw oysters on the half shell with lemon, capers and spicy cocktail sauce.

I got two beautiful 8-oz. beef filets that I'll grill over charcoal. I found some fresh corn on the cob; I usually coat the ears with butter, salt and pepper then warp them in aluminum foil to cook on the back of the grill. Simply turn them every couple of minutes. Just before the steaks are ready, I'll flash grill some asparagus spears that have been marinating in olive oil and balsamic vinegar.

We're not sure if we want a salad. Probably not. Vanilla ice cream for desert.

My favorite place by the water. I started going to the Outer Banks in the '50s and Ocracoke in '58. It has changed a lot since then.

Skillet style, in crushed tomatoes, mushrooms, onions, etc.

Baked a loaf of bread (for dunkin'), and a spinach-pepperoni roll for snacking later on.

4. Meatloaf sandwich

TJ made a meatloaf this morning after she got home from work.

I'm putting meatloaf and cheese on a hoagie roll and heating it up.
Tossed salad with lots of peppers.

Pumpkin pie (baked from frozen) is lurking in the refrigerator for dessert.

so I made a chicken potpie yesterday ... left it in the fridge
overnight so everyone could become friends
had it Tonight.... it was so good ...
nice thing is it has everything ..
veggies..protein..and starch ...
fruit for desert ...
