All I know is seafood, and the Resident Gourmand is headed to the WF for that right now.
So since I can't tell you much about dinner, let me tell you about lunch! I went to a conference today on healthy foods in the school system. It also had to do with school gardens. Needless to say, the breakfast, lunch, and cocktail hour was all healthy food. And--interestingly enough, it was an actual school dinner served at that particular school's cafeteria.
Grilled chicken with oregano and lemon, salt, pepper, and of course, garlic. Vegetable medley of halved Brussels sprouts, zucchini, carrots, and snow peas. The vegetables were barely cooked and had a crunchiness to them that one rarely finds at that type of an affair. Farro, I think it was, and chickpeas with a dark green leafy vegetable in it.
There were several types of cookies for dessert (plus something else that I can't remember) but the one I had was ginger. It was so good that I vowed to make a healthy cookie recipe sometime in the next day or two.
Organic wines at the cocktail hour. Plus samosas with mango sauce. Hummus and crudite.
I had a fantastic day and am so excited about all the people I met and the new ideas that came my way!

Your lunch sounds delicious! Hope your seafood is wonderful.

(22,050 posts)We found it on the internet. She had so many interim steps that we moderated it a little bit.
3 lbs. of cubed stew beef floured and browned on the stove. Then throw the meat in the crockpot with the wine, etc. Later, you add the onions and carrots. Near the end, after 4-5 hours, add the mushrooms. When finished, serve with mashed potatoes. We had green beans on the side.
Yummy!
And I'll have left-overs when Miss C. heads back to the city.

(131,129 posts)Not unlike 'mine,' I 'invented,' so few 'interim steps.' Browning my least favorite. And as no crockpot, on stove-top for a few hours. AND use jarred pearl onions, and canned peas and carrots.

that cuban chicken sounds sooo good IB ...
hope you enjoy it .. my wife taught in Miami
and we ate a lot of cuban food down there
...

(32,070 posts)I marinated it in yogurt, lemon juice and peel, garlic, salt, pepper, and oregano and parsley.
Wish I had some rice, but I'm fresh out. (grocery day is tomorrow). Baked sweet potatoes is all I gots!

Love short ribs cooked for four hours.

Now I have to figure out what to make tomorrow.
