I have a pork roast in the crock pot for Bill (BBQ sandwiches) and I'll probably do something lighter for myself.
What's for dinner where you are?

diced onions
garlic
fresh ginger
red bell pepper
a small chile pepper
cumin
about 3-4 T. of Neufchatel cheese
salt and pepper to taste
sweet potato (from hollowing out process)
I am on a diet, so the veggies were mixed with apple juice and simmered til soft, then mixed with the cheese. Pop all of this bake into the sweet potato shells and bake at 350 F. until heated through - about 20 minutes.

1 package (32 ounces) frozen fully cooked Italian meatballs
1/2 cup chopped onion
1/4 cup packed brown sugar
1 envelope onion soup mix
1 can (12 ounces) beer or nonalcoholic beer
12 hoagie buns, split
3 cups (12 ounces) shredded Swiss cheese
Directions
In a 3-qt. slow cooker, combine the meatballs, onion, brown sugar, soup mix and beer. Cover and cook on low for 3 to 4 hours or until heated through.
Place six meatballs on each bun bottom. Sprinkle each sandwich with 1/4 cup cheese. Place on baking sheets. Broil 4-6 in. from the heat for 2-3 minutes or until cheese is melted. Replace bun tops. Yield: 12 servings.

favorite for everyone. i use a dark ale. 16 oz or more. i put in more brown and more onion. i butter and toast bun first and use lots of grated swiss before putting in oven to melt.
i make 8-10 subs and they are great left over....

So, chicken cacciatore tonight, with her favorite smoked salmon boquitos and a baby spinach salad. Hope the bakery has a nice dessert as no time to bake today. Chilling the Martinelli's as she doesn't drink.

(163,986 posts)Last Friday, my windshield was frozen, which has only happened a handful of times in the forty odd years we've been here. Then, it's been warm and light so the poppies are blooming. It definitely feels like spring.

(50,130 posts)Sunday was beyootiful sunny. Monday was gawdawful rainstorm and cold. This morning a light dusting of snow. Wednesday 50, Thursday & Friday to be 63.
The birdies are confused, I can tell.

(50,130 posts)I say that because I didn't use a burgundian wine, but rather a California zinfandel.
Stew meat on sale today. Browned diced bacon, pearl onions, cremini mushrooms, half a bottle of zin. Bouquet garni, peppercorns, kosher salt. Two hours simmer. A teaspoon of Better Than Bouillon, a slurry at the end to thicken.
Served with whole wheat noodles and sourdough bread (for those who can carb it up). Sliced English cukes, radishes and baby carrots on the side for some fresh crunch: crudites.
Berry compote from the freezer for dessert. Heavy cream available.

(9,791 posts)It's actually cubed boneless pork threaded on short skewers and breaded than baked in a slow oven. I'm assuming the chicken part is because you can pick up the finished skewers and eat it like you would eat a chicken drumstick. Anything breaded is good. When you add some creamy mashed potatoes, gravy and steamed fresh broccoli and cauliflower it's much better. I ate too much.
