Assemble on comfy chair with legs elevated for 2-3 hours at 75 degrees until chilled.
(Tropical variation - mix aforementioned on lawn chair near the pool tented with umbrella at 90-100 degrees.)
Keep hydrated with accompanying beverage.
If the family asks where dinner is, remind them this is the "I Don't Care" special.

(796 posts)Typically I answer "bean burritos, it is". Luckily wife and son like them(vegetarians). I have steak tacos!

(9,839 posts)They are both very easy recipes and are in continuous rotation in my kitchen.
All you need to add is a protein source--meat or beans and you have a complete dinner.

(34,137 posts)The amounts are whatever I feel like, but I chop onion and bell pepper (maybe 1/2 cup each), maybe some garlic. Saute with four chicken breasts or thighs in some olive oil until the onions are translucent. Stir in brown rice, cook for a couple of minutes, stir in turmeric, add water or broth,cook until the rice is done. At the end, stir in 16 ounces green peas (one can, drained, or a package of steam in bag, cooked).
Serve with black bean soup (garnish with chopped onions and a splash of apple cider vinegar) and green tossed salad.
