What's for Dinner, Wed., June 27, 2018

Chef's salad, made with home-grown romaine and spinach. I told the RG this is what I wanted, so he made it up with his own creative spin. It had potatoes, cucumber, onion, Emmenthaler, parmesan, hardboiled egg, and sliced ham. Also olives. He cooked the potatoes with pepper jack cheese and then combined it with the ham. He made a warm dressing for the salad and tossed it all together.

For dessert, we had milk chocolate squares. Also salted-caramel biscotti to dip in white wine.

Perfect light meal for summer. We are dining early these days, due to the fact that I have to be at work at 6:30 p.m. with the new summer session starting.

pork chops and potatoes cooked in the same skillet.
Coleslaw and leftover peanut butter cake.

Some of that with a chicken breast sandwich. Cold decafe tea.

4. 1960's time warp meal

Sirloin pork chops covered with undiluted cream of mushroom soup; added a few shakes of Worcestershire and some fresh ground pepper. then baked in slow oven about 1 1/2 hours till sauce was browned and bubbling.
Baked sliced fresh yellow squash with some chopped onion , little s & P, baked in shallow dish in oven for about 25 minutes ( I usually nuke this dish, but oven was going). Made rice-a-roni plus salad made with garden lettuce, grated carrot and chopped ripe Texas tomato. Made my own vinaigrette dressing. Ripe watermelon chunks for dessert (watermelons are above average this year).

I found a store bought roast chicken in the frig! Score! Thanks TJ.
I've eaten the legs off that.

and then cottage cheese and blueberries

and now I think I'll have one of those drumsticks (the ice cream kind) that I saw in the freezer.

Cooking & Baking? Meh, This was foraging.

FLFC has not arisen from his slumbers. I was concerned so I spoke to him several times and only got a yawn and a sleepy belly rub request. I'm sure I'll hear from him in the wee hours. His hours are as erratic as his humom and dad.
