Mango and grilled peach salad. Also has apple in it. Has these great peachy grilled juices over it and a hot Thai pepper mixed in.
Bison burgers with the usual tomato, lettuce, raw onion, and for a little bit of a twist, avocado. No bun, but maybe a low-carb flatbread.
Grilled vegetables: asparagus with red pepper. Baby eggplant and peppers, too.
I bought a bottle of Proseco to celebrate the last week of the summer semester.
Dessert: watermelon, red grapes, and cherries. On the side, a piece of almond "cake," made with almond flour and butter brickle pieces from Haagen Daz ice cream.

FLFC had a meaty medley of chicken breast, ground beef and minute steak. He turned up his nose initially at all but the chicken, but then dug in all of it when the chicken was gone. I don't have his rating as TJ just left and he is howling at the door to see if she will come back. Spoiled rotten, he is.

BTW, chili over cornbread w/cheddar cheese is one of my faves.
Got a package of veggies at the store, already chopped. Cauliflower, cabbage, snap peas, broccoli. Comes with a very good sauce. I added peas, carrots and green onions.

Nothing like a ripe peach. IMHO
Chicken soup with pesto, spinach and other veggies - from Whole Foods. Tortilla chips and queso after that. Almond Joy.
And...Going out for a beer.

I use the very easy and delicious Serious Eats recipe, but I don't stick-blend cilantro into the sauce at the end since I like the flavor without better, just sprinkle fresh cilantro on top. It came out much too watery this time, so I cooked some potato in it and we had it as a spicy soup with some avocado and mozzarella cheese chunks dropped in to offset the heat, while I reduced the rest into a sauce.
Leftover sheet pan harissa chicken with leeks today, yum, but already looking forward to pork burritos with a salad tomorrow. I was behind the curve in finding the sheet pan recipe (Melissa Clark's version), btw, but very glad I finally tried it.
