One Pound of Shrimp, a Meal for Four

Here, a little shrimp — chopped, spiced and tossed with rice noodles — goes a long way.

'Here’s how to feed a family of four with a pound of shrimp: It starts with a visit to the fish market, and ends with a dish of spicy, deeply flavorful shrimp-flecked rice noodles.

You’ll first want to look for wild shrimp in the shell, fresh or frozen, unless you have access to sustainably raised farmed shrimp. Be aware that most farmed frozen shrimp, though inexpensive, are of dubious origin, and are likely dipped in some kind of preservative solution. I’d rather get a small amount of higher-priced wild shrimp.

Ask to have the shrimp peeled and deveined, or do it yourself at home. Then, start chopping: Using a large knife, cut the shrimp crosswise into rough quarter- to half-inch pieces. In a few minutes, you’ll have nice pile.

You are essentially making a flavorful mixture of spiced minced shrimp that’s similar in shape and bite to crumbled sausage. You’ll add ginger, garlic, soy sauce, scallions, sesame oil and hot red pepper and let the flavors meld: The longer it rests in the fridge, the more aromatic the mixture becomes. (By the way, this mixture could also be used as a won ton filling, but that’s another story and a bigger project.)'>>>

INGREDIENTS:
3 tablespoons butter
3 cloves garlic, chopped
1 pound shrimp, peeled and deveined
1 teaspoon salt
1 teaspoon pepper
Juice of ½ lemon
1 teaspoon red chili flakes
¼ cup parsley, chopped
½ pound cooked spaghetti

PREPARATION: - Melt the butter in a pot over medium heat. - Cook the garlic until it starts to brown. - Add the shrimp, salt, and pepper, cooking until shrimp is pink all the way through. - Add the lemon juice, chili flakes, and parsley. - Add the spaghetti, and toss until evenly coated.

Our favorite is Cajun style barbecued shrimp. Many Cajun recipes for call for cooking this dish in a skillet. I put mine in a shallow baking dish.

Clean 1 pound shrimp, if heads on, remove, pick shells, feet and all off shrimp Rinse and let drain

Heat oven to 400.

Mince fine - 4 or 5 cloves garlic Melt a stick butter in baking dish, put dish in oven till butter melts. (2 or 3 minutes). Remove dish from oven and add the minced garlic, mash it with fork to incorporate garlic taste into butter.. Add 3 or 4 shakes Worcestershire sauce, 3 or 4 shakes tabasco. Mix well. Add shrimp and stir, making sure shrimp is coated in butter mixture. Place dish in oven and bake until shrimp is pink, about 6 to 8 minutes. watch closely so shrimp won't overcook.

Husband wants RiceaRoni with this dish. I usually steam some broccoli or simmer baby pea with a little onion. Make nice salad, with home-made vinaigrette. This is one of my old boy's favorite meals.

One of my favorites to make it cause it is quick and super easy
