What's for Dinner, Sun., Sept. 2, 2018

Shrimp salad, spicy broccoli, and endive salad with tomatoes and other chopped vegetables.

The shrimp salad is made with dill.

Dessert is five-seed almond bars (TJs) served with spicy orange tea.

in the Instant Pot, kind of a sweet-sour deal, though, as my son said, very "ginger-forward". I also stir-fried a number of veggies. White Basmati for the guys, brown rice for me.

3. Salad

Leftover Asian salad - from a prepackaged kit - a couple of kinds of cabbage, carrots and others I don't recall. It has a sesame soy dressing.

To this I will add some shredded meat from Korean BBQ ribs that are very spicy and a fresh chopped tomato. I've made some additional dressing of soy, cider vinegar, oil, garlic, ginger and a pinch of sugar to pour over the tomato and meat.

Edit to add: I forgot to mention the crispy noodles topping the salad for the crunch.

Oh my, oh my, that BBQ is fire hot! Making a mug of decaf Red Rose tea to wash it down.




TJ is getting ready for work right now, so I'll be eating after she goes.

We've altered FLFC's schedule so he gets some more exercise. Since TJ is a day sleeper and me a night sleeper he was spending much of the day and night in bed. He had an "OUT" this afternoon and then he ate some chewy dog food, cat treats (turkey), a small piece of Colby cheese for dessert. He lobbied for a couple of fake bacon treats and got them also. He had another "OUT" and then went to sleep.

5. Rock Cornish Game Hens plus

I found some very small rock garnish game hens at my local Fiesta supermarket. Of course they were frozen, but the package said they were organically raised, I haven't cooked these little hens in years, and forgot how I prepared them. So on the fly, I mixed Dijon Mustard with a little soy sauce and some dark molasses. Let the little hens cook in the oven until half baked, then spread my sauce on them to finish baking. Also cut out the back bone so they'd lay flat. There is an fancy-dancy name for this technique, but I can't remember it. I had some fresh picked green beans that had I blanched earlier. Sauteed them in a little butter with garlic powder. Of course, I had to make Rice-a-Roni, the old boy's favorite. Made a big leafy salad with my home-made tomato vinaigrette.

As you can see, I was on a roll, so while the hens were baking, I made a cobbler using fresh peaches and supermarket pie crust The old boy even went up the dairy store to get us some vanilla ice cream for the cobbler.

The little size of the hens made them so much better, it was like eating quail.

Hot damn, you were n a roll. Sounds delicious. Laughed about the Rice-a-Roni for the "old boy."
