Going to Make Atlantic Beach Pie Again

While watching the Weather Channel about the Hurricane Florence, heard the Weatherman mention Atlantic Beach several times. So I decided to make the pie again.

This time instead of 4 egg yolks, I am going to beat 2 eggs until creamy. I do this when I make a banana pudding, the recipes calls for 4 egg yolks, thinking you are going to beat the egg whites into a meringue. I like whipped cream on top of Banana Pudding and also Atlantic Beach Pie, so why waste the egg whites. Just have to whisk the eggs well to make sure the whites are incorporated with the yolks before adding to the milk mixture.

Also lemons are still 2 for a dollar, limes are 20 for a dollar. I am going to use lime juice although lemon is better, but not THAT better.

I'm still working through my 20 limes, maybe by the time they are gone the price of lemons will be down.

Wow! A new favorite. The sweet-salty-buttery-tart combo is outstanding. DH likes lemon meringue pie, I don’t especially (too tart) and he loved this.
Another great lemon pie is Lemon Sponge, a PA Dutch favorite, in which sugar, milk, melted butter and the juice of a lemon are folded into beaten egg whites and baked in a traditional crust for a kind of delicate lemon custard.

I thought this was a Swedish recipe, but, whatever, it is an easy recipe and so tasty when eaten warm from the oven with a dollop of whipped cream on top. There is a similar Southern recipe called chocolate cobbler.

Used 2 whole eggs instead of the 4 egg yolks, whisked them well before adding the condensed milk and lemon juice, worked fine, can't tell the difference.

Yes, the price of lemons has come down, they were 5 for a dollar, nice thin skinned and juicy.

This crust is so much better than a graham cracker or cookie crust, I think it could be used for other pies. It would be good with a chocolate cream filling. Will have to work a recipe for that.

Keep on cooking folks. use fresh, scratch ingredients, no fake stuff, so much better for you and all the difference in the world in taste. I don't fry, eat my toast dry, but .... when it comes to baking, gotta have butter!
