What's for Dinner, Sun., Sept. 30, 2018

Chicken pot pie, made by the RG for me before he left for Phoenix. They're heated up and I tasted them and are they ever delicious. There are the usual vegetables like carrots, celery, but he also put some kind of creamy cheese over the top. This is a crustless pie, as we are low-carb diners.

Today I was strolling through my gardens and find my herb garden still doing remarkably well. I clipped off a good assortment and tonight's pie will have chopped parsley on top. Other nights it might be tarragon, savory, or some other.

I would like to make some kind of salad with all my peppers and tomatoes, but it will have to be different than the usual. Researching recipes at the moment.

For dessert, hot chocolate and a chocolate-covered biscotti.

1. Sheet Pan Asian Stir Fry with Jasmine rice.

INGREDIENTS:
4 boneless, skinless chicken breasts, cut into 1-inch chunks
2 carrots, cut diagonally into 1/2-inch-thick slices
1 red bell pepper, thinly sliced
1 yellow bell pepper, thinly sliced
16 ounces broccoli florets*
1 cup snow peas
1 teaspoon sesame seeds
1 green onion, thinly sliced
FOR THE SAUCE
3 tablespoons reduced sodium soy sauce
2 tablespoons oyster sauce
1 tablespoon rice wine vinegar
1 tablespoon brown sugar, packed
1 tablespoon freshly grated ginger
2 cloves garlic, minced
1 teaspoon sesame oil
1 teaspoon cornstarch
1 teaspoon Sriracha, optional
DIRECTIONS:
Preheat oven to 425 degrees F. Lightly oil a baking sheet or coat with nonstick spray.
In a small bowl, whisk together soy sauce, oyster sauce, rice wine vinegar, brown sugar, ginger, garlic, sesame oil, cornstarch and Sriracha, if using; set aside.
Place chicken, carrots and bell peppers in a single layer onto the prepared baking sheet. Stir in soy sauce mixture and gently toss to combine.
Place into oven and bake for 16-18 minutes, or until the chicken is cooked through. Stir in broccoli and snow peas during the last 7-10 minutes of cooking time.
Serve immediately, garnished with sesame seeds and green onion, if desired.

A "sort of", inauthentic pasta fazool. Sauteed onions and garlic, then simmer with tomatoes, zucchini, black olives and cannelini beans, over farfalle. Maybe or maybe not garlic bread. Apple crisp for dessert.

Cher, I really envy your herb garden Irisblue, I'm saving your recipe, sounds tasty and very do-able.

I played golf this afternoon and didn't get home until almost 8:30.

Turkey sandwich with lettuce and tomato on seeded rye bread with spicy brown mustard.

Three Musketeers bar and a glass of lemonade.

Classy!

Out. Near Snoqualmie falls. WA.
I had beef ravioli with mushrooms and cream sauce. The bread was excellent! Served with a great infused evoo with fresh garlic.

Tried dessert too. Dark and white chocolate bread pudding with caramel sauce. Decadent!
