What's for Dinner, Tues., Oct. 2, 2018

Appetizer: chicken liver mousse on crackers

Main dish: Eggplant parmesan. Whole wheat (einkorn) pasta with tomato sauce. Eggplant topped with burratta and fresh basil.

Dessert: Agave-sweetened ricotta and pear slices with dark chocolate.



p.s. For the next 8-10 weeks, I'll be posting the thread early, as I have a new work schedule and will be working during my usual posting time.

Stuffed with sausage, rice, cheese, fresh herbs and maybe something else - depends on what catches my eye.

I happened to stop by the little store today just as they were putting out the beef they just ground. I knew FLFC would approve.

Burger with no cheese, raw onion slice and a touch of brown mustard on a potato bun. It was a smaller size bun so the burger stuck out the sides.
Tossed salad with ranch
Oven fries

FLFC had his own small burger with no bun. He liked it so much he didn't ask "where's the cheese?". He was so occupied by the burger, he didn't ask to check out the salad or potatoes. He burped and went to lie down without giving a review. I suspect it would have been four paws up.

I got tied up with work and never got onto DU. Dinner, however was great!

Yesterday was National Fried Scallops Day:

I picked up a dozen sea scallops on the way home and we floured them then pan-fried them in olive oil. Steamed broccoli and yellow rice completed the dish. Delicious and easy.

90% Cocoa chocolate and red wine for dessert.
