Roasted tomatoes, peppers, scallion, garlic with salt & pepper, a little cane sugar syrup, and basil.
The RG prepped these and I put them in a slow oven earlier this afternoon.
Right now doing prep for apple dutch baby pancake, which will be tonight's dessert.
The RG is shopping at WF and says the seafood looks good, so probably salmon or tuna steaks.
BTW, for lunch I made up a really good sammich: 2 slices lightly breaded eggplant. In the middle, crumbled blue cheese. Tomato slice. I warmed the eggplant and melted the blue cheese very slowly in a skillet. Stacked all that on an English muffin.

(22,048 posts)My Landlady(!) decided she wanted to roast a full chicken with stuffing. I'm sure she'll make a gravy from the goodies.
I know we have some sweet potatoes so I expect that to be on the table. We also have the second half of a big chunk of broccoli.
I think I saw a locally-baked apple pie...
It's wonderful when I don't have to cook!

(38,578 posts)I don't typically put a stuffing in mine. Rather, I marinate the chicken for several hours in white wine, olive oil, lemon juice, chopped onions, chopped celery, chopped bell pepper, rosemary, garlic powder and S&P.
Then when I put in in the oven I stuff all those chopped veggies into the cavity w/ half a lemon. The chicken comes out so moist and flavorful, and the carcass has all that flavor so when I make soup stock it comes out amazing.
I suppose thinking about the soup stock is pointless if it's my last meal, unless I'll leave the carcass for my man to make his own soup.

(47,532 posts)Whip together lemon juice, olive oil, water from the cooked pasta, then add grated parmesan.
Mix with the pasta, together with lemon zest and chopped basil. Yum!

(38,578 posts)And no, I didn't make the crust. I purchased a flatbread crust.
Topped it w/ sauce and cheese, as well as hamburg, onion, mushrooms, red peppers and garlic. Tasty.
We have a really tasty week coming up: roasted chicken, shrimp scampi, hamburg stroganoff, and probably another pizza (we have a crust leftover). We also got a ham steak, so I'm thinking I'll make a ham hash for brekkie either today or tomorrow. (Hash is so affordable and so tasty--and you can make it w/ almost anything (corned beef, roast beef, ham, pork, turkey, sausage, or even hot dogs).)
and FTR, 10/20 was a Saturday, not a Sunday.
