Woman who created green bean casserole dies at 92

HADDONFIELD, N.J. (AP) — The woman who created a Thanksgiving staple — the green bean casserole — enjoyed by millions has died at age 92.

Dorcas Reilly died on Oct. 15 of Alzheimer's disease, said Ken Tomlinson of the Hinski-Tomlinson Funeral Home in Haddonfield, New Jersey.

Campbell Soup officials said the New Jersey resident was the driving force behind the popular dish, made with green beans and cream of mushroom soup topped with crunchy fried onions. The company said it is the most popular recipe ever to come out of its corporate kitchen.

The original recipe card was donated to the National Inventors Hall of Fame in 2002.

"Dorcas was an incredible woman, whose legacy will live on for years to come. She will be missed by her Campbell colleagues and all those who were impacted by her creativity and generous spirit," the company said in a statement.

Reilly was a Campbell Soup kitchen supervisor in 1955 when she combined the ingredients of the now-legendary green bean casserole for an Associated Press feature.

One year, half the guests brought the horrid GBC to the meal! The discussion began about whose secret family recipe was the original. When I pointed out that the dish was invented by a soup company employee, the cries of “my family recipe wasn’t, no way!” ensued.

I’d sooner eat a bowl of shit.

I do know that in the 50's and even early 60's mixing food with Campbells soup was a big deal.

Not sorry to see the demise of tomato aspic "salad", tho.

I'm glad no one in my family was ambitious enough to make aspic from canned tomato soup.

.....And did! I grew up in the 1950's and didn't taste a fresh vegetable until I was 19, and left home. Other than tomato on a sandwich, or corn-on-the-cob in season, it was all out of a friggin' can in my childhood home.

Mom wanted quick, fast and easy. I didn't know what broccoli, asparagus, or cauliflower was, until I was on my own. Now I rarely ever have any vegetable from a can. As for GBC...UGH! I've always loathed that crap. The soup alone is gag worthy.

A mess of bleached out vegetables, none of which retained their original flavors.

Truly horrible. We probably ate it weekly.

.....My mother used to make beef-vegetable soup with leftover chuck roast. The day she discovered Veg-All was cause for culinary sorrow in our house. Just open a can, dump it in. No one could distinguish the difference between the carrots and the potatoes. They all tasted the same.

But the worse she made was after cooking a ham hock with beans, the next day she'd chop that up and add it to....CHILI! Ugh, slick ham fat just doesn't work well in a dish like chili.

My mother's generation was raised on home canned stuff, which could be a food poison source, so she boiled to death anything that came in a jar or a can.
Including Veg-all. If you throw that in a pot with tomato soup, some cut up hot dogs, you have what she called poor man's beef stew.

With a side of canned boiled to death spinach.

Seriously, I thought for years we were the kids that survived her cooking, that there were some before us who didn't make it.

GBC must be on the table at all major holidays. Use canned green beans as the original recipe intends. Most of the family hates mushrooms so I use cream of celery, which is better IMO.

This is not one of my favorite dishes, but my granddaughter always makes it. We also always have "Julia Child Green Beans", fresh green beans, blanched, then saute'd in EVO with a sprinkle of garlic on them.

Gosh, makes me hungry - gotta go make lunch. All American favorite: Campbell's tomato soup, grilled cheese sandwich with dill pickle on the side.
