What's for Dinner, Wed., Oct. 24, 2018

Pork medallions with homemade apple sauce. Earlier, the pork had been marinated in herbs, garlic, and tamari. Then the juice was sweetened slightly and white wine added to make a sauce, which was poured over the top. Then a tablespoon or two of apple sauce.

Sauteed mushrooms.

Roasted Brussels sprouts (Trader Joe alert: they have them at only $3.99 a stalk).

Another vegetable side dish of zucchini and shredded leeks sauteed in butter.

Tomato cucumber salad.

A couple teensy-weensy oatmeal raisin cookies (about an inch in diameter) with spicy orange tea for dessert.

I made Bean, spinach& vegan italian sausage soup.
Drop biscuits. Hot decaf tea.
