What's for Dinner, Sat., Oct. 27, 2018

BBQ pork sammiches with cole slaw.

The RG doesn't like BBQ, so he made his a different way. It has coriander seed in it and he made a sauce with the apple juice, and then he took some celery stalks and pureed them into this fluffy mixture and put it on top. It's much better than my BBQ, I have to admit.

Salad of chopped vegetables like tomato, carrot, zucchini, and red onion.

Dessert is red grapes and toasted almonds.

1. I'm making a Beef Curry

I'm cleaning out the freezer and found a English chuck roast. I split into thirds, one for tonight, the second portion is becoming beef stock with a roasted beef shank with garlic and onions. Last third I'm not sure for tomorrow, I might grind it in my food processor to make a 'hamburger' or make a beef stew with it. Served with jasmine rice. Hot decafe tea.

Of course, beef curry is a little odd since many of the people of India don't eat beef. Obviously, curries aren't limited to Indian cuisine.

The first Indian restaurant I ever went to was in NYC's Harlem in the late 1970s. It was called Bombay India Restaurant and it was located on 125th Street just east of Amsterdam Avenue. The joint was a hole in the wall and you had to bring your own beer. It was a bit of a sketchy neighborhood in those days. Today, it's a vibrant and bustling neighborhood and President Clinton's offices are a couple of blocks east.

Since I had never tried this unique cuisine, my french horn-playing friend ordered for me: Beef vindaloo, aloo paratha, Basmati rice, a steamed cabbage dish that I've never seen again, (it was delicious) and the yogurt sauce called raita. Since then, I've never seen beef on the menu of any Indian restaurant so I gravitate towards the chicken and seafood dishes; I'm not a big lamb fan. Regardless, I've been hooked on this cuisine ever since then. In fact, if I eat Indian one evening, I'll be craving it the next day!

Dealing with a nor'easter today, so I'm kinda cooped up inside. Anyway, I'm watching the
Florida-Georgia game while things are cooking.

Leftovers will probably be made into roast beef hash (to go with eggs for breakfast).

Heavy on the mashed garlic/butter/then broiled hard Italian bread

Oh,.. she wine,.. me beer or two.

Salted caramel/chocolate chip cookies.

I'm making Hubby a small Bobli-crust pizza with pepperoni and assorted veggies, and I'm having zoodles, mushrooms, and sweet sausage with a truckload of mozzarel' on top. Mmmmmn, cheesy.

My Landlady(!) is rehearsing until 8:00 and although I've offered to cook for her, she hasn't told me if she has any preferences. Fortunately, we've got a full fridge so I'll be able to make something yummy. I know there's a frozen catfish in the freezer so I've got a plan if she doesn't.

Life's wonderful when your biggest concern of the day is what to make for dinner!

Must be a curry kind of day.
Mine’s been simmering in coconut milk and juice till absobed then add more... like risotto, I guess. Also has lots of garlic and cauliflower too. Taste tested but its not ready yet. Will serve with jasmine rice.
