About 4 days ago I cooked peeled potatoes to make mashed potatoes. I don't remember why I didn't, but anyway was stuck with a pan of almost whole potatoes, all cooked. Didn't feel like potato sald....
So I rinsed them in cold water, strained, and put them into a plastic covered container. Today, we made our own individual home fries, me with butter, him with olive oil, just by slicing the cold cooked potatoes, with some Old Bay sprinkled on top, browned to perfection in about 5 minutes. You can fry them in Crisco too if you want a crisper potato..
This cooking the potatoes way ahead saves a lot of time if the family likes home fries.... I'm going to do this more often - maybe with eggs for breakfast?

There's always potato for home fries for Sunday breakfast.
My husband loves fried potatoes and plain old hamburger with some onion chopped into it, fried to well done. Salt, pepper and garlic are the only seasonings I use. It's a fast lunch and like I said, he loves it.

(53,661 posts)I server that with a veggie burger and whatever vegetable I have on hand, sliced avocado or a salad. Sometimes I bake several potatoes keep them in the refrigerator for this.
