Has anyone ever made a slab pie?

I've got to bring dessert to a potluck Christmas luncheon, and I recently saw a cooking show that described a slab pie, a flat pie made in a large jelly roll pan.

I've never made one, but it seems pretty simple, especially if I cheat and use frozen pie dough and canned pie filling. But I'm willing to go the hard way, if someone has a tested and recommended recipe.

Anyone?

Use some granny smith or tart ones with a bunch of sugar. More thinly sliced so the pie doesn't get too lumpy as a regular one.
Light on the apple pie spice. Flour of course to make a sauce. One layer of apple filling.

I suppose you can use a premade crust, but she made her own and always used margarine for the shorthening. Comes out tender softer than butter or like Crisco.

I remember the leftover if any. Good out of the fridge as a hand held pie!

Good fortune and happy baking with it!
