What's for Dinner, Thurs., Dec. 13, 2018

It's salad bar night! I've been busy making salads while the RG has been out on LI. That is, in between teaching classes. So far I have:

cucumber salad in crema Mexicana
spinach salad with grapes, toasted almonds, and Manchego cheese bits. I use Marie's cole slaw dressing on this
cole slaw with fresh pineapple bits
fennel salad with orange slices and citrus dressing

For starters, however, crackers with various cheese spreads and also chicken livers.

We’re going to my favorite holiday party and they always have amazing food!

We’ve been fasting since yesterday because this party is always catered by a high-end NYC chef.

So
Chipotle chicken thighs
Fajita Vegetables
Mexican Rice
Charro Beans

I'm going to make some grilled zucchini and corn in addition.

I don't pretend that it's marinara. There's mushrooms, onions, and peppers in it.

Al got me some Lorna Doone's yesterday, so that's dessert.

with mashed potatoes and gravy. It was even better than yesterday...flavors mingled...and for dessert...peanut butter cups...gluten free and no corn syrup...guilty pleasure.
